Cauliflower dip with walnuts

Equipment

Ingredients

  • 1 cauliflower head
  • 100 g walnuts shelled
  • 1 garlic heads optional
  • 3 tbsp olive oil
  • 1 tsp mustard (not spicy)
  • salt
  • 1 liter water for boiling

Instructions

  • break up the cauliflower in florets and boil it in 1 litre of water with salt, for about 10 minutes
  • pull the cauliflower florets out and place them in cold water to stop cooking
  • place the cauliflower florets, mustard, oil, walnuts, salt and (optionally) chopped garlic in a blender and blitz until you obtain a smooth, silky cream

Equipment

  • deep baking pan ceramic or Pyrex if possible

Ingredients

  • 1 cauliflower head medium-big size
  • 2 tbsp breadcrumbs fine
  • 200 ml sour cream full fat
  • 100 g hard cheese gouda, emmental, cheddar
  • 50 g butter
  • salt and pepper to taste

Instructions

Preparation

  • bring to boil a pot of water with 1 tbsp salt
  • break up the cauliflowers florets and put them in the boiled water, no more than 3 minutes
  • pull the florets from the hot water and place them in cold water, to stop cooking
  • butter the inside of the baking pan and line it with breadcrumbs

Baking

  • place the cauliflower florets in the baking pan; break them in smaller pieces if needed
  • pour the sour cream and shredded cheese on top of the florets and season to taste with salt and pepper; optionally, you can add an egg, well beaten (can mix with the sour cream to beat)
  • bake for about 20-30 minutes in the oven, medium heat, until cheese is melted and gets a nice, brown colour

You can optionally add a beaten egg in the sour cream mixture, pouring it in the baking pan

Foi cu lapte

O rețetă de ciorbă „de la munte” (zona Buzăului, deși cred că e mai răspândită), de primăvară, făcută cu frunze verzi (spanac, ștevie, foi de sfeclă, etc) și lapte bătut. E ușor de făcut, răcoritoare și gustoasă. Cei de la câmp („cojanii”, cum le spunem noi la munte) se cam oripilează la ideea de a pune lapte (sau smântână) în ciorbe, dar dacă încearcă, de obicei le place.

Ingredients

Fiertură

  • 1-2 legătură mare frunze de verdeață (spanac, ștevie, foi de sfeclă, leurdă, lobodă albă) un braț bun - o să scadă mult la fiert
  • 1 legătură ceapă verde
  • 1 cățel usturoi
  • 1 litru lapte bătut

Prăjeală

  • 2-3 linguri ulei
  • 1-2 linguri bulion de roșii
  • 1 ceapă mare sau 2 cepe mai mici
  • 1 morcov

Dresură

  • 1 ou (bătut)
  • 2-3 linguri smântână
  • legătură pătrunjel verde
  • legătură mărar verde

Instructions

  • Se fierb frunzele într-o oală mare. Dacă nu încap din prima, le adaugi pe rând, pe măsură ce se fierb și scad.
  • Când s-au fiert bine și înmuiat, scoți verziturile din apa de fiert, le lași un pic să se răcorească, și apoi le toci pe un fund de lemn. Nu arunci încă apa de la fiertură.
  • Separat prăjești într-o tigaie, cu 2-3 linguri de ulei, ceapa tocată, morcovul tocat. După ce s-au prăjit să devină translucent (dar să nu se caramelizeze) adaugi 1-2 linguri de bulion de roșii sau pastă de tomate și continui să prăjești la foc mai mic,
  • Pui înpoi în oala de fiert buruienile tocate, ceapa prăjită în bulion de roșii, adaugi ceapă tocată, un cățel de usturoi și cel puțin un litru de lapte bătut (dacă e de casă și mai bine). Mai poți completa cu zeamă în care au fiert buruienile.
  • Lași să dea două-trei clocote la foc mic, și apoi dregi cu 2-3 linguri de smântână, oul bătut (îl poți bate cu smântâna), o legătură de mărar tocată și o legătură de pătrunjel tocată. Amesteci să se omogenizeze, Stingi focul, e gata de servit.

Equipment

Ingredients

  • 1 cabbage head medium size
  • 1 red bell pepper
  • 1 onion medium/large
  • 1 carrot optional
  • 1 tomato
  • 1 tbsp tomato sauce/paste canned
  • 3 tbsp vegetable oil preferably not olive oil
  • salt to taste
  • black pepper to taste

Preparation

  • Chop the onion, red pepper, tomato, (carrot)
  • Shred the cabbage head as for coleslaw (stripes, not chopped),

Cooking

  • Add the chopped onion and red pepper in the pan/wok, with 3 tablespoons of oil, over medium heat. Optionally you can add one chopped carrot. Cook, stirring occasionally until onion becomes translucent - make sure it does not start browning.
    1 red bell pepper, 1 onion, 3 tbsp vegetable oil
  • Add chopped tomato (cubes) to the pan. Stir and let it cook for another 2-3 minutes

  • Add the tomato paste/sauce and continue cooking for another 2-3 minutes.

  • Start adding shredded cabbage to the pan, stirring slowly. If it doesn’t fit all at once, start by adding only a part of it, stir to homogenise, and let it cook under lid, stirring occasionally. As the cabbage reduces, keep adding shredded cabbage until you’ve added all of it. Season to taste with salt and pepper (can add other spices if you want, such as paprika).
    1 cabbage head, salt, black pepper
  • Switch to low heat, put the lid on the pan (a glass lid is better, you can see it cooking) and let it cook slowly for 20-30 minutes. The cabbage will release water and the lid will help steaming it. Every 10 minutes lift the lid and stir, but not too vigorously (do not crush the cabbage).
  • Turn the heat off, take the lid off and let it to rest and ‘settle’

Notes

This is the vegetarian recipe, but it can be made with meat as well. Ideally you’d use smoked sausages or smoked ham, you add the meat ingredients to cook at the beginning, before adding the cabbage.
Optionally, you can put chopped carrot (one) at step 1

Equipment

  • Vas mare (preferabil tuci)
  • Răzătoare

Ingredients

  • 10 kg vinete coapte bine
  • 6 kg gogoșar sau ardei kapia coapte bine
  • 3 kg morcov dați pe răzătoarea mare
  • 3 kg ceapă tocată cuburi/solzi
  • 1 rădăcină păstârnac tăiat cuburi
  • 1 rădăcină țelină tăiat cuburi
  • 2 litri ulei

Instructions

  • Coci vinetele și ardeii. Nu arunca zeama rezultată, strecoară-o
  • Dă morcovul pe răzătoarea mare
  • Într-un vas mare (tuci, să încapă toate) pui la încins ulei după ochi, și începi cu rădăcinile (morcovii și rădăcinile albe). NU le lași să se caramelizeze, doar să se coacă un pic să devină translucide. Foc mediu.
  • Adaugi apoi ceapa, mai lași un pic
  • Adaugi vânăta tocată, și lași să se omogenizeze
  • Adaugi ardeiul copt tocat, și aștepți două clocote.
  • Amesteci continuu între timp
  • Adaugi acum bulionul de roșii sau pasta de roșii diluată în apă fiartă
  • După un clocot-două mai completezi cu ulei
  • Lași să fiarbă până se înmoaie toate
  • Acum poți condimenta cu ce vrei: busuioc, piper, etc.

Notes

Poți înlocui jumătate din cantitatea de vinete cu:
  • 5 kg ciuperci (ghebe), călite înainte în ulei, adăugate pe la jumătatea procesului sau
  • 1.6 kg d fasole albă, fiartă separat 
Poți deasemeni înlocui toate vinetele cu cantități ajustate de ciuperci sau fasole albă.
