Equipment

Ingredients

  • 1 cauliflower head
  • 100 g walnuts shelled
  • 1 garlic heads optional
  • 3 tbsp olive oil
  • 1 tsp mustard (not spicy)
  • salt
  • 1 liter water for boiling

Instructions

  • break up the cauliflower in florets and boil it in 1 litre of water with salt, for about 10 minutes
  • pull the cauliflower florets out and place them in cold water to stop cooking
  • place the cauliflower florets, mustard, oil, walnuts, salt and (optionally) chopped garlic in a blender and blitz until you obtain a smooth, silky cream
