Pate de conopidă cu nuci (cauliflower dip with walnuts)

Ingredients
- 1 cauliflower head
- 100 g walnuts shelled
- 1 garlic heads optional
- 3 tbsp olive oil
- 1 tsp mustard (not spicy)
- salt
- 1 liter water for boiling
Instructions
- break up the cauliflower in florets and boil it in 1 litre of water with salt, for about 10 minutes
- pull the cauliflower florets out and place them in cold water to stop cooking
- place the cauliflower florets, mustard, oil, walnuts, salt and (optionally) chopped garlic in a blender and blitz until you obtain a smooth, silky cream
